Carrot Banana Smoothie

This insanely delicious carrot banana smoothie will have you gladly drinking your veggies. It is simple, has no added sugars, and works for vegan, paleo, and Whole30 diets.

It’s completely ok for you to be a little intrigued about the thought of carrots in a smoothie. I know I was.

But then I realized carrots are amazing in carrot cake, so they must be amazing in a smoothie. And I was 100% right. You cannot go wrong with making this smoothie. It is a little on the sweet side, so much so you could probably call it a carrot milkshake.

Sweet enough you could drink it for dessert and be satisfied or in the middle of the day for those afternoon cravings. But if you are not a sweets kind of person we can account for that too by leaving out the date. I have your back.

I love this paleo smoothie because:

  • It is naturally sweetened by the ingredients in it, no added juices or honey to make it sweeter
  • so insanely healthy (see the health benefits of carrots below)
  • easy to make, you don’t even have to peel the carrot
  • an excellent way to get more veggies in your diet, without having to feel like your eating more veggies. I know you know.

Ingredient notes and substitutions

A few notes on the ingredients:

  • Banana– Make sure you use a frozen banana. This is what makes the smoothie creamy and cold. I always keep a gallon freezer bag stashed in the freezer from when the bananas are getting a little to brown to eat. I would go with a ripe banana for best flavor.
  • Date– Dates are found in the produce section of your store most likely. In the U.S. you finally mostly dried dates and that is perfect. Be sure to remove the pit if you didn’t buy pitted dates. If you do not want a super sweet smoothie leave the date out or cut in half. See expert tips on how to use.
  • Carrot- You don’t have to worry about peeling the carrot unless you want to.
  • Milk– You can use any unsweetened, plain non dairy milk you would like. I used coconut milk from the carton not the can.

Expert tips

Keep these things in mind before making this carrot banana smoothie.

  • Date tips– be sure you remove the pit if you didn’t buy pitted. If your date is not very soft, then you are going to want to soak the date in really hot water for about 5 minutes before adding to the blender. Just place it in a small bowl, add super hot water and then drain after 5 minutes.
  • If you don’t have a high-power blender- you are going to want to chop everything small. If you have a Vitamix or Blendtec or anything like that you will be fine with just roughly chopping the carrot.

This smoothie is the perfect sneaky way to add more veggies and nutrients into kids’ diets. They will love it because of the sweetness. My toddler absolutely loves this smoothie, and I have even turned it into popsicles for him.

What are some health benefits from eating carrots?

Carrots are super high in beta carotene (the orange color in the carrot), retinol, vitamin k and vitamin c. They are an excellent source of antioxidants that protect against cardiovascular disease and cancer.

Raw carrots can also help balance your hormones, in particular estrogen levels. This can help with PMS symptoms, breastfeeding moms, and menopause.

Equipment

  • 1 Blender

Ingredients

  • 1 cup coconut milk (from the carton) or milk of choice
  • 1 pitted date, medjool or deglet noor
  • 1 pinch of cinnamon
  • 1 5 inch carrot, chopped and ends removed (peeling optional- I don't bother with it)
  • 1 frozen, ripe banana break into a few chunks to make things easy for your blender

Instructions

  • Place all ingredients in blender in the order listed. Blend on high until completely smooth. Enjoy cold, right away.

Notes

  • If your date is not super soft, then you will want to soak it first. Place the date in a small bowl and had super hot water. Soak the date for about 5 minutes, and discard the water. 
  • If you do not have a high-powered blender it will be best to cut everything into small pieces before blending. 
  • If you do not want a super sweet smoothie you can omit the date.
